Sold out. This is yet another extra delicious coffee from producer Gilberto Baraona at Los Pirineos in El Salvador. A tiny bit of funk, ripe berries, creamy and lightly floral.

This shade grown coffee is of the Pacamara variety or cultivar. It was developed in El Salvador by the Salvadoran Institute of Coffee Research and Gilberto has been working with it since its inception. Pacamara is a cross between Pacas, which is a natural mutation of Bourbon, and Maragogype, hence the name Pacamara. The climate, along with being shade grown, allows this coffee to mature more slowly and allow for more sugars to develop, which is apparent in the cup.
